Ingredients

• 15 Fresh kiwis, peeled and chopped
• 1 fresh honeydew melon, skinned, cored, and chopped
• 1 tbs. of citric acid
• 1 tbs. of freshly ground cardamom
• 8 cups of sugar
• 1/2 cup of water
• 1/2 cup of fresh lime juice

Preparation

Combine all of the ingredients in a container and let macerate for at least 24 hours while refrigerated. Before serving, agitate mixture and stir up ingredients and immediately strain through a fine mesh sieve. Recipe will yield about 1 quart.
