Diamond Dancer
Ingredients:
1 ½ oz. Belle Isle Honey Habanero
1 oz. Rhubarb shrub (recipe below)
½ oz. Campari
½ oz. Averna
½ oz. lemon juice
club soda
mint and lemon wheel garnish
Preparation:
Combine all ingredients except club soda in a shaker tin and shake. Double strain into a Collins glass over ice and top with club soda. Garnish with lemon wheel and mint.
**Rhubarb Shrub: Blend 2 cups chopped rhubarb, 2 cups apple cider vinegar, and 2 cups sugar until smooth, then fine strain.
